As mentioned before, Carstens is a great example of celebrating ‘in-season’ produce. And here’s why.
Working with suppliers, partners, friends, and family all in one, and closer to home than ever before, we would like to introduce you to one of them: Groenhartig. Only a 20-minute drive from Carstens Brasserie, you’ll find our holy temple when it comes to greens, herbs, fruits, and edible flowers.
Ever since 2016, the team of Groenhartig is there to cater the chefs and foodies from in and around Amsterdam. Growing salads, vegetables and all just mentioned happens according to ecological principles. This means that they not just look at the end-product, but also at the ecosystem in which their gardens are situated, for instance: the health of their soil. A motto that cannot be missed reads: A healthy soil is the basis for a healthy human. The Carstens team couldn’t agree more, and that’s exactly the reason we decided to partner up.
Carstens uses ingredients in their purest form possible and therefore can only be seen as ‘in-season’. As Head Chef Jeroen Bruinsma puts it: “when nature does most of the work for us, the focus is on sourcing the best products possible and then simply elevating them with the right techniques, temperature, and seasoning, before adding just a little flair on the plate”.
